Spring Lemon Bars

Delight in the fresh, tangy flavor of Spring Lemon Bars featuring a buttery crust and zesty lemon filling, perfect for a light and refreshing dessert.

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour, divided
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/4 cup freshly squeezed lemon juice
  • 2 teaspoons lemon zest
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan or line with parchment paper.
  2. In a medium bowl, cream together the butter, 1/2 cup sugar, 1 1/2 cups flour, and salt until well blended. Press the mixture evenly into the prepared pan.
  3. Bake the crust for 15-20 minutes or until lightly golden. Remove from oven and set aside.
  4. In another bowl, whisk the eggs, remaining 1 1/2 cups sugar, lemon juice, lemon zest, 1/2 cup flour, and baking powder until smooth and combined.
  5. Pour the lemon filling over the hot crust and return to the oven for another 20-25 minutes until the filling is set.
  6. Allow to cool completely in the pan on a wire rack, then dust with powdered sugar and cut into bars.

Notes

For an extra burst of flavor, add a teaspoon of fresh thyme or basil to the lemon filling before baking.
