frittata

A frittata is a versatile Italian egg-based dish, perfect for breakfast, lunch, or dinner, featuring a flavorful mix of vegetables, cheese, and herbs cooked slowly to a golden finish.

  • 6 large eggs
  • 1/4 cup milk
  • 1 cup spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1 teaspoon fresh basil, chopped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk together the eggs, milk, salt, and pepper until combined.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Sauté onions and garlic until translucent and fragrant, about 3 minutes.
  5. Add spinach and tomatoes and cook for another 2 minutes until spinach is wilted.
  6. Pour the egg mixture over the vegetables in the skillet, stirring gently to combine.
  7. Sprinkle mozzarella cheese and fresh basil evenly on top.
  8. Cook on stovetop without stirring for 5 minutes until edges begin to set.
  9. Transfer skillet to the oven and bake for 10-12 minutes until the frittata is fully set and lightly golden on top.
  10. Remove from oven, let cool slightly, slice, and serve warm.

Notes

For a richer flavor, add cooked sausage or mushrooms. Serve with a side salad or crusty bread for a complete meal.
