Zucchini Turkey Casserole

This Zucchini Turkey Casserole combines lean turkey and fresh zucchini in a savory, baked dish that’s both healthy and satisfying. Perfect for a wholesome dinner that’s quick to prepare.

Ingredients

  • 2 medium zucchinis, sliced
  • 1 lb ground turkey
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  3. Add ground turkey, cook until browned and no longer pink. Season with salt, pepper, and oregano.
  4. Stir in marinara sauce and remove from heat.
  5. In a baking dish, layer half the sliced zucchini, then half the turkey mixture.
  6. Repeat layers, then sprinkle breadcrumbs, mozzarella, and Parmesan evenly on top.
  7. Bake uncovered for 25–30 minutes until cheese is melted and golden.
  8. Let cool slightly before serving.

Notes

For added flavor, sprinkle some fresh basil or parsley over the top before serving. This casserole pairs well with a side salad or garlic bread.
