Delight in these creamy white chocolate peanut butter cups, combining rich peanut butter filling with smooth white chocolate for an indulgent homemade treat.

  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 cups white chocolate chips
  • 1 teaspoon coconut oil (optional, for melting white chocolate)

Instructions

  1. Line a mini muffin tin with paper liners.
  2. In a bowl, mix peanut butter, softened butter, powdered sugar, and vanilla extract until smooth and combined.
  3. Melt the white chocolate chips with coconut oil in a microwave-safe bowl, stirring every 20 seconds until smooth.
  4. Pour a small amount of melted white chocolate into each paper liner, spreading evenly to cover the bottom. Freeze for 10 minutes.
  5. Add about a teaspoon of the peanut butter mixture on top of the hardened white chocolate layer in each cup.
  6. Cover the peanut butter layer with the remaining melted white chocolate, ensuring it seals the filling completely.
  7. Refrigerate the cups for at least 30 minutes until firm.
  8. Remove from liners and enjoy or store in an airtight container.

Notes

For an extra crunch, sprinkle a pinch of sea salt on top of the white chocolate before it sets.
