Traditional Irish Colcannon

Traditional Irish Colcannon is a comforting mashed potato dish mixed with cabbage and scallions, offering a creamy and flavorful side perfect for any meal.

Ingredients

  • 2 pounds potatoes, peeled and cubed
  • 4 cups chopped green cabbage
  • 4 scallions, chopped
  • 4 tablespoons butter
  • 1/2 cup whole milk
  • Salt and pepper, to taste

Instructions

  1. Place potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes.
  2. While potatoes cook, melt 2 tablespoons butter in a large skillet over medium heat. Add chopped cabbage and cook until softened, about 5-7 minutes.
  3. Add scallions to the cabbage and cook for an additional 2 minutes.
  4. Drain the potatoes and return to the pot. Mash with remaining butter and warm milk until smooth and creamy.
  5. Stir in the cooked cabbage and scallions mixture. Season with salt and pepper to taste.
  6. Serve warm as a traditional Irish side dish.

For added richness, try mixing in a little cream or topping the colcannon with crispy bacon bits.
