A refreshing and vibrant Strawberry Cucumber Salad that combines sweet strawberries with crisp cucumbers, dressed in a light citrus vinaigrette—perfect as a healthy snack or side dish.

  • 2 cups fresh strawberries, hulled and sliced
  • 1 large cucumber, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Wash and prepare strawberries and cucumber by slicing them thinly.
  2. In a large bowl, combine sliced strawberries, cucumber, and chopped mint leaves.
  3. In a small bowl, whisk together honey, lemon juice, olive oil, salt, and pepper until well combined.
  4. Pour the dressing over the strawberry and cucumber mixture and toss gently to coat.
  5. Chill the salad in the refrigerator for at least 15 minutes to allow flavors to meld.
  6. Serve cold as a refreshing side or light snack.
