Strawberry Cream Cheese Muffins

Moist and fluffy strawberry cream cheese muffins, perfect for breakfast or a sweet snack, bursting with fresh strawberries and a creamy filling.

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh strawberries, chopped
  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine melted butter, buttermilk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in chopped strawberries, being careful not to overmix.
  6. In a small bowl, mix cream cheese and powdered sugar until smooth.
  7. Spoon a tablespoon of muffin batter into each liner, add a small dollop of cream cheese mixture in the center, then cover with more batter.
  8. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  9. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra flavor, sprinkle the tops with a little coarse sugar before baking or add a drizzle of strawberry glaze when cooled.
