  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup fresh strawberries, finely chopped
  • 1 cup Cool Whip (whipped topping), thawed
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix the egg, Cool Whip, and vanilla extract until well combined.
  4. Gently fold the chopped strawberries into the wet mixture.
  5. Combine the wet and dry ingredients until just mixed; do not overmix.
  6. Drop spoonfuls of batter onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
