Spring Pea Pasta with Burrata Mint

This Spring Pea Pasta with Burrata and Mint is a fresh, vibrant dish combining tender peas, creamy burrata, and aromatic mint for a perfect light meal.

Ingredients

  • 8 oz pasta (such as linguine or fettuccine)
  • 1 cup fresh or frozen peas
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 cup fresh mint leaves, chopped
  • 1 ball burrata cheese (about 4 oz)
  • 1 lemon, zested and juiced
  • Salt and freshly ground black pepper, to taste
  • Parmesan cheese, for serving (optional)

Instructions

  1. Cook pasta in salted boiling water according to package instructions until al dente. During the last 2 minutes of cooking, add the peas to the water. Drain pasta and peas, reserving 1/2 cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the drained pasta and peas to the skillet. Toss to combine and warm through.
  4. Remove from heat and stir in lemon zest, lemon juice, and chopped mint. Add reserved pasta water a little at a time to loosen the sauce if needed.
  5. Season generously with salt and freshly ground black pepper.
  6. Divide pasta among plates. Top each serving with a portion of burrata cheese.
  7. Optionally, sprinkle with Parmesan cheese before serving.

Notes

For extra freshness, garnish with additional mint leaves and a drizzle of good quality olive oil before serving.
