Spring Pea Hummus with Crudites

A vibrant and creamy spring pea hummus served with fresh, crunchy crudites, perfect for a light snack or appetizer bursting with bright flavors and nutrition.

Ingredients

  • 1 ½ cups fresh or frozen peas (thawed if frozen)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tablespoons tahini
  • 2 tablespoons fresh lemon juice
  • 2 garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh mint leaves (optional, for garnish)
  • Assorted crudites such as carrot sticks, cucumber slices, bell pepper strips, and radishes

Instructions

  1. In a food processor, combine the peas, chickpeas, tahini, lemon juice, garlic, olive oil, and cumin.
  2. Blend until smooth and creamy, stopping to scrape down the sides as needed.
  3. Season with salt and pepper to taste, and blend briefly to combine.
  4. Transfer the hummus to a serving bowl and garnish with fresh mint leaves if desired.
  5. Arrange assorted crudites on a platter around the hummus for dipping.
  6. Serve immediately or refrigerate for up to 2 days for flavors to meld.

Notes

For extra richness, drizzle a little more olive oil on top before serving. You can also add a pinch of smoked paprika or red pepper flakes for a spicy kick.
