Spring Lemon Herb Gnocchi

A light and refreshing Spring Lemon Herb Gnocchi dish featuring soft potato gnocchi tossed in a zesty lemon-herb sauce, perfect for a bright seasonal meal.

Ingredients

  • 500g potato gnocchi
  • 2 tbsp olive oil
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh basil, chopped
  • 2 tbsp fresh chives, chopped
  • Salt and pepper, to taste
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup pine nuts, toasted

Instructions

  1. Bring a large pot of salted water to a boil and cook the gnocchi according to package instructions until they float to the surface. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the cooked gnocchi to the skillet and toss gently to coat with the garlic oil.
  4. Stir in lemon zest, lemon juice, chopped parsley, basil, and chives. Season with salt and pepper to taste.
  5. Cook for an additional 2 minutes to let the flavors meld together.
  6. Remove from heat and sprinkle with grated Parmesan cheese and toasted pine nuts.
  7. Serve immediately, garnished with extra herbs if desired.

Notes

For an extra creamy texture, stir in a tablespoon of mascarpone or crème fraîche before serving.
