Spring Fattoush Salad

Spring Fattoush Salad is a fresh and vibrant Middle Eastern salad featuring crisp vegetables, toasted pita bread, and a tangy sumac dressing, perfect for a light and healthy meal.

Ingredients

  • 2 cups mixed spring greens (lettuce, arugula, spinach)
  • 1 cucumber, diced
  • 2 medium tomatoes, chopped
  • 1/2 red onion, thinly sliced
  • 1/2 cup radishes, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 2 pita breads, toasted and broken into pieces
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon pomegranate molasses (optional)
  • 1 teaspoon ground sumac
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the spring greens, cucumber, tomatoes, red onion, radishes, parsley, and mint.
  2. In a small bowl, whisk together olive oil, lemon juice, pomegranate molasses (if using), ground sumac, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Add the toasted pita pieces on top and toss lightly just before serving to keep them crunchy.
  5. Serve immediately as a refreshing starter or side dish.

Notes

For extra flavor, sprinkle some toasted pine nuts or sumac-spiced grilled chicken on top to make it a fuller meal.
