Spring Chicken Soup with Orzo

This light and comforting Spring Chicken Soup with Orzo combines tender chicken, fresh vegetables, and delicate orzo pasta, perfect for a revitalizing meal during the warmer months.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 6 cups low-sodium chicken broth
  • 2 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 1 cup fresh spinach, chopped
  • 1/2 cup fresh peas
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery; sauté until vegetables are softened, about 5 minutes.
  2. Add chicken broth and bring to a boil.
  3. Reduce heat to a simmer and add the chicken breasts. Cook until the chicken is cooked through, about 15 minutes.
  4. Remove chicken from the pot, shred it with two forks, and set aside.
  5. Add the orzo pasta to the simmering broth and cook until tender, about 8 minutes.
  6. Return shredded chicken to the pot along with the spinach and peas. Cook for another 2–3 minutes until vegetables are tender and heated through.
  7. Stir in lemon juice, and season with salt and pepper to taste.
  8. Ladle soup into bowls and garnish with fresh parsley before serving.

Notes

For extra flavor, garnish with a sprinkle of grated Parmesan cheese or a drizzle of good quality olive oil before serving.
