  • 1 unbaked 9-inch pie crust
  • 5 large eggs
  • 1 cup milk
  • 1 cup fresh spinach, chopped
  • 3/4 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup finely chopped onion
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the pie crust in a 9-inch pie pan and set aside.
  3. In a skillet, sauté chopped onion and minced garlic over medium heat until softened, about 3 minutes. Add chopped spinach and cook until wilted, about 2 more minutes. Remove from heat and let cool slightly.
  4. In a large mixing bowl, whisk together eggs, milk, salt, pepper, and oregano.
  5. Stir the sautéed spinach mixture, feta cheese, and mozzarella cheese into the egg mixture.
  6. Pour the filling into the prepared pie crust.
  7. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and the top is lightly golden.
  8. Allow to cool for a few minutes before slicing and serving.

Notes

For a richer flavor, substitute half the milk with cream or add a pinch of nutmeg to the egg mixture.
