Spinach & Artichoke Quiche

A creamy and savory Spinach Artichoke Quiche perfect for brunch or a light dinner, packed with fresh spinach, tender artichokes, and melted cheese in a flaky crust.

  • 1 pie crust (9 inch)
  • 1 cup fresh spinach, chopped
  • 1 cup canned artichoke hearts, drained and chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 4 large eggs
  • 1 cup half-and-half or heavy cream
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place the pie crust in a 9-inch pie dish and set aside.
  3. In a skillet over medium heat, sauté minced garlic until fragrant, about 1 minute.
  4. Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
  5. In a mixing bowl, whisk together eggs, half-and-half, salt, pepper, and nutmeg if using.
  6. Spread the cooked spinach, chopped artichokes, mozzarella, and Parmesan evenly over the pie crust.
  7. Pour the egg mixture over the filling in the crust, making sure it is evenly distributed.
  8. Bake in the preheated oven for 35-40 minutes or until the quiche is set and the top is lightly golden.
  9. Let cool for 5 minutes before slicing and serving.

Notes

For extra flavor, add a pinch of red pepper flakes or serve with a side salad for a complete meal.
