Sourdough Pretzel Rolls

These Sourdough Pretzel Rolls combine the tangy depth of sourdough with a classic pretzel crust, resulting in soft, chewy rolls perfect for sandwiches or snacking.

  • 1 cup sourdough starter (active and bubbly)
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon brown sugar
  • 1 cup warm water (about 110°F)
  • 2 tablespoons unsalted butter, melted
  • 8 cups water (for boiling)
  • 1/4 cup baking soda
  • Coarse sea salt, for sprinkling

Instructions

  1. In a large mixing bowl, combine the sourdough starter, warm water, and brown sugar. Stir until smooth.
  2. Add the flour and salt to the mixture and knead until a soft, elastic dough forms, about 8-10 minutes by hand or 5 minutes with a stand mixer.
  3. Cover the dough and let it rise at room temperature for 4-6 hours, or until doubled in size.
  4. Divide the dough into 8 equal pieces and shape each piece into a round roll.
  5. Cover the rolls and let them rest for 30 minutes.
  6. Preheat the oven to 450°F (230°C). In a large pot, bring 8 cups of water and the baking soda to a boil.
  7. Carefully boil each roll for 30 seconds on each side, then place them on a baking sheet lined with parchment paper.
  8. Brush each roll with melted butter and sprinkle with coarse sea salt.
  9. Bake for 15-18 minutes until dark golden brown.
  10. Let rolls cool slightly before serving.

Notes

For an extra flavor boost, try brushing the rolls with melted garlic butter after baking or serve with mustard for dipping.
