  • 1 cup sourdough discard
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 2 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the sourdough discard, all-purpose flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, beat the egg, then mix in the milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  5. Grease the waffle iron lightly if needed, then pour the batter onto the iron, spreading evenly.
  6. Cook waffles until golden brown and crisp, typically 4-5 minutes, depending on your iron.
  7. Carefully remove the waffles and serve immediately with your favorite toppings.

Notes

For extra crispiness, keep cooked waffles warm on a rack in a 200°F (93°C) oven while you finish cooking the rest. Serve with fresh fruit, maple syrup, or yogurt.
