Sourdough Discard Pizza Dough

This sourdough discard pizza dough is a flavorful and easy way to reduce waste while making delicious, crispy homemade pizza crusts perfect for any topping.

  • 1 cup (240g) sourdough starter discard (unfed)
  • 2 1/2 cups (310g) all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tbsp olive oil
  • 1/2 cup (120ml) warm water
  • 1 tsp instant yeast (optional for extra rise)

Instructions

  1. In a large mixing bowl, combine sourdough discard, warm water, and olive oil.
  2. Add flour, salt, sugar, and instant yeast (if using). Mix until a shaggy dough forms.
  3. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise at room temperature for 4-6 hours or until doubled.
  5. Preheat your oven to 475°F (245°C) and prepare your pizza toppings.
  6. Roll or stretch the dough out on a floured surface into your desired pizza shape.
  7. Transfer the dough to a baking sheet or pizza stone, add toppings, and bake for 12-15 minutes until crust is golden and crispy.

Notes

For a chewier crust, ferment the dough overnight in the refrigerator and let it come to room temperature before baking.
