Sourdough Cheese Crackers

Delightfully crispy and cheesy, these Sourdough Cheese Crackers combine tangy sourdough starter with sharp cheddar for a flavorful homemade snack.

Ingredients

  • 1 cup sourdough starter discard (unfed)
  • 1 cup all-purpose flour
  • 4 oz sharp cheddar cheese, finely grated
  • 2 tbsp unsalted butter, cold and cubed
  • 1/2 tsp salt
  • 1/2 tsp garlic powder (optional)
  • 1-2 tbsp cold water, as needed

Instructions

  1. In a mixing bowl, combine sourdough starter, flour, salt, and garlic powder.
  2. Cut in the cold butter using a pastry cutter or your fingers until mixture resembles coarse crumbs.
  3. Stir in the grated cheddar cheese.
  4. Add cold water a tablespoon at a time and knead gently until a cohesive dough forms.
  5. Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes.
  6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. On a lightly floured surface, roll out the dough to about 1/8-inch thickness.
  8. Cut into desired shapes using a knife or cookie cutter and place on the prepared baking sheet.
  9. Prick each cracker with a fork to prevent puffing.
  10. Bake for 20-25 minutes or until golden and crisp.
  11. Allow to cool completely on a wire rack before serving.

Notes

For extra flavor, sprinkle crackers with flaky sea salt or a dash of smoked paprika before baking.
