Sourdough Breakfast Casserole

A hearty and delicious sourdough breakfast casserole combining custardy eggs, savory sausage, and melted cheese for a comforting morning meal.

  • 6 cups sourdough bread, cubed
  • 8 large eggs
  • 2 cups whole milk
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large skillet, cook sausage over medium heat until browned; drain excess fat.
  3. In the same skillet, sauté onion, bell pepper, and garlic until softened.
  4. In a large bowl, whisk together eggs, milk, salt, pepper, and thyme.
  5. Add the cubed sourdough bread, cooked sausage, sautéed vegetables, and half of the shredded cheese to the egg mixture; stir gently to combine.
  6. Pour the mixture into the prepared baking dish and top with the remaining cheese.
  7. Bake uncovered for 40-45 minutes, or until the casserole is set and the top is golden brown.
  8. Remove from oven and let rest for 5-10 minutes before serving.

Notes

For an extra flavor boost, add fresh herbs like parsley or chives on top before serving, or substitute sausage with bacon or ham.
