Smashed Potatoes with Garlic Aioli

Crispy smashed potatoes paired with a creamy garlic aioli, perfect as a flavorful side or appetizer.

  • 1.5 pounds baby potatoes
  • 3 tablespoons olive oil, divided
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 450°F (230°C).
  2. Place baby potatoes in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook until potatoes are fork-tender, about 15-20 minutes. Drain and let cool slightly.
  3. Line a baking sheet with parchment paper. Arrange potatoes on the sheet and gently smash each potato with the bottom of a glass or potato masher until flattened but still in one piece.
  4. Drizzle 2 tablespoons of olive oil over the smashed potatoes. Sprinkle with salt and pepper.
  5. Bake in the preheated oven for 20-25 minutes, or until crispy and golden brown.
  6. Meanwhile, prepare the garlic aioli by mixing mayonnaise, minced garlic, lemon juice, Dijon mustard, and remaining 1 tablespoon olive oil until smooth. Season with salt and pepper to taste.
  7. Serve the crispy smashed potatoes warm with a side of garlic aioli and garnish with chopped parsley if desired.

Notes

For extra flavor, sprinkle smoked paprika or grated Parmesan on the potatoes before baking.
