Slow Cooker Stuffing

A savory slow cooker stuffing with sausage, fresh herbs, and a blend of vegetables, perfect for holiday meals or comforting dinners.

  • 1 pound Italian sausage, casings removed
  • 1 medium onion, finely chopped
  • 3 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups day-old bread cubes (about 1-inch pieces)
  • 1/4 cup fresh parsley, chopped
  • 2 teaspoons fresh sage, chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon dried rosemary, crushed
  • 2 cups low-sodium chicken broth
  • 2 large eggs, beaten
  • Salt and black pepper to taste
  • 2 tablespoons unsalted butter

Instructions

  1. Heat a large skillet over medium heat and melt the butter. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through, about 6–8 minutes.
  2. Add the chopped onion, celery, and garlic to the skillet with the sausage. Cook until the vegetables soften, about 5 minutes.
  3. In a large bowl, combine the bread cubes, cooked sausage and vegetable mixture, parsley, sage, thyme, and rosemary. Season with salt and pepper.
  4. In a separate bowl, whisk together the chicken broth and beaten eggs. Pour the liquid over the bread mixture and gently toss until everything is evenly moistened.
  5. Transfer the stuffing mixture into a greased slow cooker and spread it out evenly.
  6. Cover and cook on low for 3 to 4 hours, stirring once halfway through cooking to ensure even heat distribution.
  7. When done, the stuffing should be moist but firm with a slightly crisp top. Serve warm as a flavorful side dish.

Notes

For a crispy top layer, remove the lid during the last 30 minutes of cooking or transfer the stuffing to a baking dish and bake at 375°F (190°C) for an additional 15 minutes.
