Slow Cooker Korean Beef

This Slow Cooker Korean Beef is a tender, flavorful dish made with marinated beef cooked low and slow in a savory-sweet Korean sauce, perfect for an effortless weeknight dinner.

  • 2 lbs beef chuck roast, thinly sliced
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup water
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes
  • 2 teaspoons cornstarch
  • 2 teaspoons cold water
  • 3 green onions, sliced
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Place the sliced beef into the slow cooker.
  2. In a bowl, whisk together soy sauce, brown sugar, water, garlic, ginger, sesame oil, and red pepper flakes.
  3. Pour the sauce over the beef and stir to coat evenly.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until beef is tender.
  5. About 15 minutes before serving, mix cornstarch and cold water in a small bowl to create a slurry.
  6. Stir the slurry into the slow cooker and cook uncovered on high until the sauce thickens.
  7. Garnish with sliced green onions and toasted sesame seeds before serving.

Notes

Serve over steamed rice or with sautéed vegetables for a complete meal. For extra heat, add more red pepper flakes or a dash of gochujang sauce.
