  • 1.5 lbs ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 large egg
  • 3 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons ketchup
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil (optional, for browning)
  • 2 tablespoons cornstarch mixed with 2 tablespoons water (optional, for thickening)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan, milk, egg, half of the minced garlic, oregano, salt, and pepper. Mix until just combined.
  2. Form mixture into 1-inch meatballs and place them into the slow cooker.
  3. In a separate bowl, whisk together honey, soy sauce, ketchup, and the remaining minced garlic.
  4. Pour the sauce evenly over the meatballs in the slow cooker.
  5. Cover and cook on low for 4-5 hours or high for 2-3 hours until meatballs are fully cooked and tender.
  6. If thicker sauce is desired, carefully remove 1/2 cup of the sauce and mix with cornstarch slurry. Stir the slurry back into the slow cooker and cook on high for an additional 15 minutes.
  7. Serve hot over rice, noodles, or as an appetizer with toothpicks.

Notes

For extra flavor, brown the meatballs in olive oil before placing them in the slow cooker; serve garnished with chopped green onions or sesame seeds.
