  • 4 boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 tbsp cornstarch (optional, for thickening)
  • 2 tbsp water (optional, for thickening)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side until lightly browned. Transfer to the slow cooker.
  2. In a bowl, whisk together heavy cream, chicken broth, lemon juice, garlic, thyme, rosemary, parsley, salt, and pepper.
  3. Pour the creamy lemon herb mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 4-5 hours, or on high for 2-3 hours, until the chicken is cooked through and tender.
  5. If you prefer a thicker sauce, mix cornstarch and water until smooth, then stir into the slow cooker. Cook on high for an additional 15-20 minutes to thicken.
  6. Serve the creamy lemon herb chicken hot, spooning the sauce over the top. Garnish with extra fresh herbs or lemon slices if desired.

Notes

For extra flavor, serve over cooked rice or creamy mashed potatoes, and garnish with freshly chopped parsley or thyme.
