Slow Cooker Corned Beef & Cabbage

This classic Slow Cooker Corned Beef Cabbage recipe delivers tender, flavorful meat and perfectly cooked cabbage, making it an effortless and comforting meal perfect for any occasion.

  • 3-4 lbs corned beef brisket with spice packet
  • 4 cups beef broth
  • 1 medium onion, quartered
  • 4 cloves garlic, smashed
  • 4 large carrots, peeled and cut into chunks
  • 6 small red potatoes, halved
  • 1 small head of cabbage, cut into wedges
  • 2 bay leaves
  • 1 tsp black peppercorns
  • Salt and pepper to taste

Instructions

  1. Rinse the corned beef brisket under cold water to remove excess salt and place it in the slow cooker.
  2. Add the beef broth, onion, garlic, bay leaves, black peppercorns, and the spice packet that came with the brisket.
  3. Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the meat is tender.
  4. About 2 hours before serving, add the carrots and potatoes to the slow cooker.
  5. About 30 minutes before serving, add the cabbage wedges and continue cooking until the cabbage is tender.
  6. Remove the bay leaves and discard. Slice the corned beef against the grain.
  7. Serve the sliced corned beef with the cooked vegetables and spoon some cooking liquid over the top.

Notes

For extra flavor, serve with a dollop of Dijon mustard or horseradish sauce on the side.
