Shrimp and Grits

Shrimp and Grits is a classic Southern dish featuring tender shrimp sautéed with spices served over creamy, buttery grits for a comforting and flavorful meal.

  • 1 cup stone-ground grits
  • 4 cups water
  • 1 cup sharp cheddar cheese, shredded
  • 4 tablespoons butter, divided
  • 1 lb shrimp, peeled and deveined
  • 6 slices bacon, chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a medium saucepan, bring water to a boil. Slowly whisk in grits and lower heat to simmer. Cook, stirring frequently, until thickened and tender, about 20-25 minutes.
  2. Stir in 2 tablespoons butter and cheddar cheese into the cooked grits. Season with salt and pepper. Cover and keep warm.
  3. In a large skillet over medium heat, cook bacon until crisp. Remove bacon with a slotted spoon and set aside, leaving bacon fat in the pan.
  4. Add onion to the bacon fat and sauté until translucent, about 3-4 minutes. Add garlic and cook for 1 minute until fragrant.
  5. Add shrimp, smoked paprika, cayenne, salt, and pepper. Cook shrimp until pink and opaque, about 3-4 minutes.
  6. Stir in lemon juice, cooked bacon, and remaining 2 tablespoons butter. Remove from heat.
  7. To serve, spoon cheesy grits onto plates and top with the shrimp mixture. Garnish with chopped parsley.

Notes

For extra flavor, try adding a splash of hot sauce or substituting cheddar with pepper jack cheese for a spicy twist.
