  • 1 lb carrots, peeled and chopped
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups vegetable broth
  • 1/2 cup coconut milk (optional)
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss the chopped carrots with olive oil, salt, and pepper, then spread on a baking sheet.
  3. Roast the carrots for 25-30 minutes until tender and slightly caramelized.
  4. In a large pot, sauté the onion in a bit of olive oil over medium heat until translucent.
  5. Add garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
  6. Add the roasted carrots and vegetable broth to the pot and bring to a boil.
  7. Reduce heat and simmer for 10 minutes to blend flavors.
  8. Use an immersion blender to puree the soup until smooth (or transfer to a blender in batches).
  9. Stir in coconut milk if using, and adjust seasoning with salt and pepper.
  10. Serve hot, garnished with fresh parsley or cilantro.

For a creamier texture, add a splash of cream or coconut milk; serve with crusty bread for a satisfying meal.
