Roasted Asparagus with Hollandaise

Delight in tender roasted asparagus topped with a rich, creamy hollandaise sauce, perfect as a sophisticated side dish or light appetizer.

  • 1 bunch fresh asparagus, trimmed
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 3 large egg yolks
  • 1 tablespoon lemon juice
  • 1/2 cup unsalted butter, melted
  • Pinch of cayenne pepper (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Place the asparagus on a baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat evenly.
  3. Roast the asparagus in the oven for 12-15 minutes, until tender and lightly browned.
  4. While asparagus roasts, prepare the hollandaise sauce: in a heatproof bowl, whisk egg yolks and lemon juice until thickened.
  5. Set the bowl over a pot of gently simmering water (double boiler) and slowly whisk in the melted butter until the sauce is thick and creamy.
  6. Season the hollandaise with salt, a pinch of cayenne pepper if desired, and keep warm.
  7. Serve the roasted asparagus drizzled generously with hollandaise sauce.

Notes

For a lighter option, substitute butter with olive oil in the hollandaise sauce, or add a sprinkle of fresh herbs like dill or chives on top.
