Reuben Sandwich with Homemade Russian Dressing

A classic Reuben sandwich layered with tender corned beef, tangy sauerkraut, melted Swiss cheese, and a flavorful homemade Russian dressing, all grilled to perfection on rye bread.

  • 8 slices rye bread
  • 1/2 pound thinly sliced corned beef
  • 1 cup sauerkraut, drained
  • 8 slices Swiss cheese
  • 4 tablespoons unsalted butter, softened
  • For the Homemade Russian Dressing:
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon prepared horseradish
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1 teaspoon white vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare the Russian dressing by mixing mayonnaise, ketchup, horseradish, Worcestershire sauce, paprika, white vinegar, salt, and pepper in a small bowl. Set aside.
  2. Butter one side of each slice of rye bread.
  3. On the non-buttered side of 4 slices, spread a generous layer of Russian dressing.
  4. Top the dressing with Swiss cheese, a layer of corned beef, and sauerkraut.
  5. Spread Russian dressing on the non-buttered side of the remaining 4 slices and place them on top, buttered side up, creating sandwiches.
  6. Heat a large skillet over medium heat and grill each sandwich 3–4 minutes per side until the bread is golden brown and the cheese has melted.
  7. Remove sandwiches from the skillet, let rest for a minute, then slice in half and serve warm.

Notes

For a spicier kick, add a few dashes of hot sauce to the Russian dressing or substitute sauerkraut with kimchi for a fusion twist.
