Delightfully crunchy and creamy peanut butter balls mixed with crispy Rice Krispies, perfect for a quick snack or irresistible dessert.

  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1 1/2 cups Rice Krispies cereal
  • 1 teaspoon vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil (optional)

Instructions

  1. In a medium bowl, mix peanut butter, powdered sugar, and vanilla extract until smooth.
  2. Gently fold in the Rice Krispies cereal until evenly combined.
  3. Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet.
  4. Chill the balls in the refrigerator for 30 minutes to firm up.
  5. In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring until smooth.
  6. Dip each peanut butter ball into the melted chocolate, coating completely, then place back on the parchment paper.
  7. Refrigerate again until the chocolate is set, about 15 minutes.
  8. Serve chilled or at room temperature.

Notes

For a nut-free version, substitute peanut butter with sunflower seed butter and ensure Rice Krispies are gluten-free if needed.
