  • 2 tablespoons sour cream
  • Food coloring pastels (pink, blue, yellow, green)
  • 1 cup unsalted butter, softened (for filling)
  • 3 cups powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 2-3 tablespoons heavy cream (for filling)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt; set aside.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Add egg, vanilla extract, and sour cream, mixing until combined.
  5. Gradually add dry ingredients to wet ingredients, mixing until a soft dough forms.
  6. Divide dough into portions and tint each with different pastel food coloring.
  7. Roll dough into 1-inch balls and place on baking sheets about 2 inches apart; gently flatten each ball slightly.
  8. Bake for 8-10 minutes or until edges are lightly golden; cool completely on wire racks.
  9. For the filling, beat butter until creamy, then gradually add powdered sugar, vanilla, and heavy cream until smooth and spreadable.
  10. Spread filling on the flat side of one cookie and sandwich with another, pressing gently to secure.
  11. Repeat with remaining cookies and filling, then chill sandwiches for 30 minutes before serving if desired.

Notes

For extra flavor, add a hint of almond extract to the filling or roll the edges of the sandwich in colored sugar sprinkles before chilling.
