This hearty Overnight Breakfast Casserole with Sausage Cheese is a simple, make-ahead dish perfect for busy mornings or brunch gatherings. Packed with savory sausage, gooey cheese, and tender bread, it delivers comforting flavor and effortless prep.

Ingredients

Scale
  • 8 oz breakfast sausage
  • 6 cups cubed day-old bread (white or whole wheat)
  • 2 cups shredded cheddar cheese
  • 8 large eggs
  • 2 cups whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme (optional)
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the sausage until browned and cooked through. Drain excess fat.
  3. In a greased 9×13-inch baking dish, layer half of the bread cubes. Top with half the cooked sausage and half the shredded cheese. Repeat layers.
  4. In a large bowl, whisk together eggs, milk, salt, pepper, thyme, and garlic powder until well combined.
  5. Pour the egg mixture evenly over the layered casserole, pressing gently to soak the bread.
  6. Cover the dish with plastic wrap and refrigerate overnight.
  7. The next morning, remove plastic wrap and bake uncovered for 45-50 minutes, or until the casserole is set and golden brown on top.
  8. Let cool for 5 minutes before serving. Enjoy warm.

Notes

For added freshness, garnish with chopped green onions or fresh parsley before serving. You can also swap sausage for bacon or ham for variety.
