Ingredients

Scale
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 cup fresh orange juice
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • 2 green onions, sliced
  • Sesame seeds for garnish (optional)
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
  3. Remove chicken from the skillet and set aside.
  4. In the same skillet, add garlic and ginger; sauté for 1 minute until fragrant.
  5. Add red bell pepper, broccoli, and carrot; stir-fry for 4-5 minutes until vegetables are crisp-tender.
  6. In a small bowl, whisk together orange juice, soy sauce, rice vinegar, and honey.
  7. Return chicken to the skillet and pour the orange sauce mixture over the chicken and vegetables.
  8. Stir in the cornstarch mixture to thicken the sauce; cook for another 2 minutes until sauce is glossy and coats everything well.
  9. Remove from heat and garnish with sliced green onions and sesame seeds if desired.
  10. Serve hot over steamed rice or noodles.

Notes

For extra zest, add a teaspoon of orange zest to the sauce before cooking, and serve with steamed jasmine rice or quinoa for a complete meal.
