This One-Pot Creamy Cajun Chicken Pasta is a flavorful, easy-to-make dinner combining tender chicken, spicy Cajun seasoning, and a luscious creamy sauce all cooked together for convenience and taste.

  • 2 tablespoons olive oil
  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon Cajun seasoning
  • 1 red bell pepper, sliced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups uncooked penne pasta
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Heat olive oil in a large pot or deep skillet over medium-high heat. Add chicken pieces and season with Cajun seasoning. Cook until browned and cooked through, about 5-7 minutes.
  2. Add the diced onion, sliced bell pepper, and garlic to the pot. Sauté for 3-4 minutes until vegetables soften.
  3. Pour in the uncooked penne pasta and chicken broth. Stir to combine, ensuring pasta is submerged in liquid.
  4. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for 12-15 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
  5. Stir in the heavy cream and Parmesan cheese until the sauce is creamy and well combined. Season with salt and pepper to taste.
  6. Remove from heat and garnish with chopped fresh parsley if desired. Serve immediately.

Notes

For extra heat, sprinkle some crushed red pepper flakes when adding Cajun seasoning or garnish with sliced jalapeños.
