This classic Old-Fashioned Chicken Pot Pie delivers a comforting blend of tender chicken, fresh vegetables, and a flaky golden crust that’s perfect for a hearty family meal.

  • 2 cups cooked chicken, diced
  • 1 cup carrots, diced
  • 1 cup peas
  • 1/2 cup celery, diced
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 1 package refrigerated pie crusts (2 crusts)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large saucepan, melt butter over medium heat. Stir in flour, salt, pepper, and onion powder until smooth; cook for 2 minutes.
  3. Gradually add chicken broth and milk, stirring constantly until the mixture thickens and starts to boil.
  4. Add cooked chicken, carrots, peas, and celery. Remove from heat.
  5. Roll out one pie crust into a 9-inch pie pan. Pour the chicken mixture into the crust.
  6. Cover with the second pie crust, seal edges, and cut several slits on top for steam to escape.
  7. Bake for 30-35 minutes or until crust is golden brown and filling is bubbly.
  8. Let cool for 10 minutes before serving.

Notes

For a richer filling, try adding a splash of heavy cream or some fresh herbs like thyme or parsley before baking.
