Mixed Berry Crisp

  • 4 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons cornstarch
  • 3/4 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup unsalted butter, cold and cut into small pieces

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine mixed berries, granulated sugar, lemon juice, and cornstarch. Toss gently to coat evenly.
  3. Transfer the berry mixture into a greased 8-inch square baking dish.
  4. In another bowl, mix oats, flour, brown sugar, cinnamon, and salt.
  5. Using a pastry cutter or fingers, cut in the cold butter until the mixture resembles coarse crumbs.
  6. Sprinkle the oat crumble evenly over the berry mixture.
  7. Bake for 35-40 minutes, or until the topping is golden brown and the berry filling is bubbling.
  8. Remove from oven and let cool slightly before serving.

Notes

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent treat.
