Mint Oreo Ice Cream Cake

A refreshing and indulgent Mint Oreo Ice Cream Cake combining creamy mint ice cream, crunchy Oreo cookie layers, and rich chocolate ganache for a perfect no-bake dessert.

Ingredients

  • 24 Oreo cookies, crushed
  • 4 tablespoons unsalted butter, melted
  • 1.5 quarts mint chocolate chip ice cream, softened
  • 1 cup heavy cream
  • 6 ounces semisweet chocolate, chopped
  • 1 teaspoon peppermint extract
  • Whipped cream and extra crushed Oreos for garnish (optional)

Instructions

  1. In a bowl, combine crushed Oreos with melted butter and press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  2. Spread half of the softened mint chocolate chip ice cream evenly over the crust.
  3. In a separate bowl, whip heavy cream until soft peaks form, then fold in the chopped semisweet chocolate and peppermint extract to make the ganache layer.
  4. Spread half of the ganache over the ice cream layer.
  5. Top with the remaining ice cream and ganache layers, smoothing the top evenly.
  6. Freeze the cake for at least 4 hours or overnight until firm.
  7. Before serving, garnish with whipped cream and crushed Oreos if desired. Remove from springform pan, slice, and serve chilled.

Notes

For best texture, let the cake sit at room temperature for 5 minutes before slicing to soften slightly.
