Mint Citrus Pisces Cake

A refreshing Mint Citrus Pisces Cake that combines zesty citrus flavors with cool mint, creating a light and vibrant dessert perfect for any occasion.

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • ½ cup Greek yogurt
  • Zest of 1 lemon
  • Zest of 1 orange
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh orange juice
  • 2 tbsp fresh mint leaves, finely chopped
  • 1 tsp vanilla extract
  • ½ cup powder sugar (for glaze)
  • 1 tbsp water (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch cake pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat sugar and eggs until pale and fluffy.
  4. Stir in melted butter, Greek yogurt, lemon and orange zest, lemon and orange juice, chopped mint, and vanilla extract until well combined.
  5. Gradually fold the dry ingredients into the wet ingredients until just combined; do not overmix.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Mix powdered sugar with water to make a glaze and drizzle over the cooled cake.
  10. Garnish with additional fresh mint leaves before serving.

Notes

For an extra burst of flavor, serve the cake chilled with a dollop of whipped cream or a scoop of vanilla ice cream.
