Mint Chip Ice Cream Sandwiches

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp peppermint extract
  • 1/2 tsp green food coloring (optional)
  • 1 quart mint chip ice cream

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Stir in vanilla and peppermint extracts, and optional green food coloring.
  4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  6. Drop tablespoon-sized scoops of dough onto prepared baking sheets, spacing about 2 inches apart.
  7. Bake for 10-12 minutes or until edges are set. Allow cookies to cool completely on wire racks.
  8. Once cooled, spread a generous scoop of mint chip ice cream onto the flat side of one cookie, then top with another cookie to make a sandwich. Press gently to spread ice cream evenly.
  9. Place assembled sandwiches on a tray and freeze for at least 1 hour before serving.

Notes

For an extra touch, roll the edges of the ice cream sandwiches in mini chocolate chips or crushed peppermint candies before freezing.
