Maple Roasted Brussels Sprouts

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • 2 tbsp pure maple syrup
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup balsamic vinegar
  • 1 tsp honey (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the halved Brussels sprouts with olive oil, maple syrup, salt, and pepper in a bowl until evenly coated.
  3. Spread the Brussels sprouts on a baking sheet in a single layer.
  4. Roast in the oven for 20-25 minutes, shaking the pan halfway through, until sprouts are tender and caramelized.
  5. Meanwhile, in a small saucepan, combine balsamic vinegar and honey, simmer over medium heat until reduced by half and syrupy (about 5-7 minutes).
  6. Drizzle the balsamic glaze over the roasted Brussels sprouts before serving.

Notes

For extra flavor, sprinkle toasted pecans or walnuts on top just before serving.
