Lightened-Up Chicken Piccata

A healthier take on classic chicken piccata featuring tender chicken breasts in a tangy lemon-caper sauce, perfect for a light and flavorful dinner.

  • 2 skinless, boneless chicken breasts, thinly sliced
  • 1/4 cup whole wheat flour
  • 2 tablespoons olive oil
  • 1/2 cup low sodium chicken broth
  • Juice of 1 lemon
  • 2 tablespoons capers, drained
  • 2 cloves garlic, minced
  • Fresh parsley, chopped, for garnish
  • Salt and pepper, to taste

Instructions

  1. Season the chicken breasts with salt and pepper, then lightly dredge in whole wheat flour, shaking off excess.
  2. Heat olive oil in a non-stick skillet over medium heat. Cook chicken pieces until golden brown and cooked through, about 4 minutes per side. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  4. Pour in chicken broth, lemon juice, and add capers. Bring to a simmer and cook for 3-4 minutes until sauce slightly thickens.
  5. Return chicken to the skillet, spoon sauce over, and heat through for 2 minutes.
  6. Garnish with chopped parsley and serve immediately.

Notes

For extra flavor, serve over whole wheat pasta or steamed vegetables.
