  • 1 cup ricotta cheese
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • Butter or oil for cooking

Instructions

  1. In a large bowl, whisk together the ricotta cheese, milk, eggs, vanilla extract, lemon zest, and lemon juice until smooth.
  2. In another bowl, combine the flour, baking powder, sugar, and salt.
  3. Gently fold the dry ingredients into the wet ingredients until just combined; do not overmix.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles appear on the surface and the edges look set, about 2-3 minutes.
  7. Flip and cook the other side until golden brown, about 1-2 minutes more.
  8. Serve warm with your favorite toppings such as maple syrup, fresh berries, or extra lemon zest.
