Lemon Pepper Chicken Thighs

Juicy and flavorful chicken thighs seasoned with zesty lemon and bold black pepper, perfect for a quick and satisfying dinner.

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 lemon (zested and juiced)
  • 2 teaspoons cracked black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine lemon zest, lemon juice, cracked black pepper, garlic powder, salt, and paprika.
  3. Pat the chicken thighs dry with paper towels and rub them with olive oil.
  4. Generously coat each chicken thigh with the lemon pepper mixture, making sure to get some under the skin.
  5. Place the chicken thighs skin-side up on a baking sheet lined with parchment paper or a lightly greased pan.
  6. Bake for 35-40 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
  7. Remove from the oven and let rest for 5 minutes before serving.
  8. Garnish with chopped fresh parsley and serve warm.

Notes

For extra crispiness, broil the chicken thighs for the last 2-3 minutes of cooking, keeping a close eye to prevent burning.
