Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon cracked black pepper

  3. Place the chicken breasts in a shallow dish and pour the lemon pepper marinade over them. Let marinate for at least 15 minutes.
  4. Heat a skillet over medium-high heat. Add a little olive oil to the pan.
  5. Cook the chicken breasts for 5-7 minutes on each side or until fully cooked and golden brown.
  6. Remove chicken from the skillet and let rest for a few minutes.
  7. Garnish with fresh parsley before serving, if desired.

Notes

For extra flavor, serve with steamed vegetables or a light side salad. You can also add a splash of white wine to the skillet when cooking for a richer sauce.
