Lemon Garlic Salmon with Spring Vegetables

  • 4 salmon fillets (6 oz each)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 cup asparagus tips
  • 1 cup snap peas
  • 1 cup baby carrots, sliced
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, minced garlic, lemon zest, and lemon juice.
  3. Place salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper.
  4. Brush the lemon garlic mixture generously over the salmon.
  5. Arrange asparagus, snap peas, and baby carrots around the salmon on the baking sheet.
  6. Season the vegetables lightly with salt and pepper, and drizzle a little olive oil over them.
  7. Bake for 12-15 minutes, or until the salmon is cooked through and vegetables are tender-crisp.
  8. Garnish with fresh parsley before serving.

Notes

For extra flavor, broil the salmon for 1-2 minutes at the end to achieve a slightly crispy top, or serve with a side of quinoa or crusty bread.
