  • 2 boneless, skinless chicken breasts, halved horizontally
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 3 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1/2 cup dry white wine (optional)
  • 3/4 cup chicken broth
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken breasts with salt and pepper. Dredge each piece in flour, shaking off excess.
  2. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Cook chicken until golden and cooked through, about 3-4 minutes per side. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Pour in white wine (if using) and chicken broth, scraping up brown bits from the pan. Let simmer until reduced by half, about 3-4 minutes.
  5. Stir in lemon juice and capers; return to a simmer.
  6. Add remaining 2 tablespoons butter and stir until the sauce thickens slightly.
  7. Return the chicken to the skillet and coat with the sauce. Cook for another 2 minutes to warm through.
  8. Garnish with chopped parsley and serve immediately, spooning extra sauce over the chicken.

Notes

For a richer flavor, use fresh lemons and serve the piccata over angel hair pasta or steamed vegetables.
