Lemon Garlic Butter Shrimp with Asparagus

A vibrant and flavorful dish featuring tender shrimp cooked in a zesty lemon garlic butter sauce served alongside crisp asparagus, perfect for a quick and healthy weeknight dinner.

  • 1 lb large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 3 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 lemon, juiced and zested
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add asparagus pieces and sauté for 3-4 minutes until tender-crisp. Remove from skillet and set aside.
  2. In the same skillet, melt butter and add minced garlic. Cook for about 1 minute until fragrant, stirring constantly to prevent burning.
  3. Add shrimp to the skillet, season with salt, pepper, and red pepper flakes if using. Cook shrimp for 2-3 minutes per side until pink and opaque.
  4. Return asparagus to the skillet and stir to combine with shrimp.
  5. Add lemon juice and zest, toss everything together and cook for an additional minute to meld flavors.
  6. Remove from heat, sprinkle fresh parsley over the dish, and serve immediately.

Notes

For extra flavor, serve with a side of crusty bread to soak up the buttery lemon sauce or over a bed of rice or pasta.
