Ingredients

Scale
  • 4 cod fillets (about 6 oz each)
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil

Instructions

  1. Pat cod fillets dry and season both sides with salt and pepper.

  3. Place cod fillets in the skillet and cook for 3-4 minutes on each side, until golden and cooked through. Remove from skillet and set aside.
  4. Reduce heat to medium and add butter to the skillet.
  5. Once butter melts, add minced garlic and sauté for 1 minute until fragrant.
  6. Stir in lemon juice and zest, then return cod fillets to the skillet, spooning the sauce over the top.
  7. Cook for another 1-2 minutes to warm through.
  8. Garnish with chopped parsley and serve immediately.

Notes

Serve this dish with steamed vegetables or over a bed of rice for a complete meal. For extra zest, add a pinch of red pepper flakes to the butter sauce.
