  • 4 cod fillets (about 6 oz each)
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 cup fresh spring peas
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Pat the cod fillets dry and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the cod fillets and cook for 3-4 minutes on each side until golden and cooked through. Remove from skillet and set aside.
  3. Reduce heat to medium and add butter to the same skillet. Once melted, add minced garlic and cook for about 1 minute until fragrant.
  4. Add the spring peas to the skillet and sauté for 2-3 minutes until tender but still bright green.
  5. Stir in lemon juice and lemon zest, then return the cod fillets to the skillet, spooning the sauce over the fish to coat evenly.
  6. Cook for an additional 1-2 minutes to heat through and meld flavors.
  7. Garnish with fresh parsley if desired, and serve immediately.

Notes

For extra richness, add a splash of white wine to the garlic butter sauce during step 3. Serve with steamed rice or crusty bread to soak up the sauce.
